Preheat the Oven
Preheat your oven to 400°F (200°C) to prepare for baking the potato skins.

Bake the Potatoes
Wash the Russet potatoes thoroughly under cold water. Prick each potato several times with a fork to allow steam to escape. Place them on a baking sheet and bake in the preheated oven for about 45-60 minutes, or until tender when pierced with a fork.

Prepare the Potatoes
Once the potatoes are baked and cool enough to handle, cut each potato in half lengthwise. Scoop out the flesh, leaving a thin layer of potato on the skin to maintain structure.

Add Cheese and Bacon
Sprinkle the shredded cheddar cheese and crumbled bacon into each potato skin, filling them generously.

Bake Again
Return the filled potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the skins are crispy.

Garnish and Serve
Remove the potato skins from the oven and top with sliced green onions. Serve hot with a side of sour cream for dipping.
