Preparing the Chicken

Bread the Chicken
Dredge each chicken breast in the flour mixture, shaking off the excess. Next, dip the chicken into the beaten eggs, allowing any excess to drip off. Finally, coat the chicken with breadcrumbs, pressing gently to adhere.

Cook the Chicken
In a large skillet, heat the olive oil over medium heat. Add the breaded chicken breasts and cook for about 5-7 minutes per side, or until golden brown and cooked through. Remove from the skillet and let rest for a few minutes before slicing.

Assemble the Salad
In a large salad bowl, combine the mixed greens, diced tomatoes, shredded Irish cheddar, red onions, black olives, sliced mushrooms, and shredded carrots. Toss gently to mix the ingredients.

Add the Apples
Carefully add the sliced apple on top of the salad mixture for a hint of sweetness.

Top with Chicken and Rasher
Slice the cooked chicken breasts and place them on top of the salad. Finally, crumble the crispy Irish rasher over the top of the salad.
