Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Breading
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and garlic powder.

Batter the Calamari
Dip each calamari ring first in the buttermilk, allowing excess to drip off, then dredge it in the flour mixture until well coated.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Fry the breaded calamari rings in batches for 2-3 minutes or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add Garlic
Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Simmer the Sauce
Add the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Stir well and let it simmer on low heat for 15-20 minutes.
