Preparing the Batter

    Melt Chocolate and Butter

    In a microwave-safe bowl, combine the unsweetened chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until the mixture is completely melted and smooth. Set aside to cool slightly.

    Mix Sugar and Eggs

    In a large mixing bowl, combine the granulated sugar, large eggs, and large egg yolks. Whisk together until the mixture is thick and pale, about 2-3 minutes.

    Combine Mixtures

    Add the melted chocolate and butter mixture to the egg mixture. Stir in the vanilla extract and mix until well combined.

    Add Flour and Salt

    Gently fold in the all-purpose flour and a pinch of salt until just combined. Be careful not to overmix.

Baking the Cakes

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare Ramekins

    Grease four ramekins with butter and dust with cocoa powder to prevent sticking.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

    Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is still soft.

    Cool Slightly

    Remove the ramekins from the oven and let them cool for 1-2 minutes before inverting onto plates.

Serving

    Dust with Powdered Sugar

    Sprinkle powdered sugar over the top of each lava cake.

    Serve immediately with a scoop of vanilla ice cream on the side.
