Method

Preparing the Buffalo Cauliflower

    Prepare the Cauliflower

    Preheat your oil in a deep frying pan to 350°F (175°C). Cut the cauliflower into bite-sized florets and set aside.

    Make the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper. Gradually whisk in the water until the mixture is smooth and has a thick consistency.

    Coat the Cauliflower

    Dip each cauliflower floret into the batter, ensuring it is fully coated, and allow the excess batter to drip off.

    Fry the Cauliflower

    Carefully place the battered cauliflower florets into the hot oil in batches. Fry for about 5–7 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.

    Toss in Buffalo Sauce

    Transfer the fried cauliflower to a large bowl, pour the buffalo sauce over them, and toss gently to coat evenly.

Making the Bleu Cheese Dressing

    Prepare the Dressing

    In a mixing bowl, combine the mayonnaise, sour cream, crumbled bleu cheese, milk, lemon juice, garlic powder, salt, and black pepper.

    Stir the mixture until smooth and creamy. Adjust the consistency with more milk if necessary.

    Refrigerate the dressing for at least 30 minutes before serving to allow the flavors to meld.
