    Cook the Sausages

    In a large skillet, heat a tablespoon of butter over medium heat. Add the Irish sausages and cook them for about 15-20 minutes, turning occasionally until they are browned and cooked through.

Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the potatoes into evenly sized pieces. Place them in a large pot, cover with water, and add a teaspoon of salt. Bring to a boil and simmer for about 15-20 minutes or until fork-tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth. Season with salt and pepper to taste. Keep warm while preparing gravy.

Gravy

    Make the Gravy

    In the same skillet used for the sausages, melt 2 tablespoons of butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Thicken the Gravy

    Sprinkle the flour over the onions and stir well to combine. Cook for another minute. Gradually whisk in the beef broth, stirring constantly until the gravy thickens. Season with salt and pepper to taste.
