French Toast

Prepare the Egg Mixture
In a mixing bowl, whisk together eggs, milk, vanilla extract, and cinnamon until well combined.

Cook the French Toast
Heat a skillet over medium heat and melt 1 tablespoon of butter. Dip each slice of bread into the egg mixture, allowing it to soak briefly. Cook the soaked bread in the skillet for about 2-3 minutes on each side or until golden brown. Add more butter as needed. Repeat until all slices are cooked.

Serve the French toast warm with a drizzle of maple syrup.

Cook the Bacon
In a skillet over medium heat, cook the bacon strips until crispy, about 5-7 minutes. Drain on paper towels.

Wash and dice the potatoes into small cubes.

In a bowl, toss the diced potatoes with olive oil, paprika, salt, and pepper. Spread evenly on a baking sheet and roast in a preheated oven at 425°F (220°C) for about 25-30 minutes or until golden and crispy, flipping halfway through.

Wash and cut the mixed fresh fruit into bite-sized pieces. Serve in a bowl.
