Prepare the Chicken
Preheat your grill to medium-high heat. Place each chicken breast between two sheets of plastic wrap and pound them to about 1/2 inch thickness.

Assemble the Cordon Bleu
Season each chicken breast with salt and black pepper. Place 2 slices of Canadian bacon and 2 slices of Swiss cheese on each chicken breast. Fold the chicken over to encase the filling.

Dredge the Chicken
Set up a dredging station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Dip each stuffed chicken breast in flour, then egg, and finally coat with breadcrumbs.

Grill the Chicken
Drizzle olive oil on the grill grates. Place the breaded chicken breasts on the grill and cook for about 6-7 minutes per side, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).

Remove from the grill and let the chicken rest for a few minutes. Serve hot, garnished with your choice of herbs or vegetables.
