Trim and score

Pat the chicken thighs very dry with paper towels. If the thighs are very thick, trim excess fat and make 2 shallow 1/4-inch slashes in the meatiest part so the marinade penetrates and the meat cooks evenly.

Season

In a large bowl combine kosher salt, coarsely ground black pepper, minced garlic, lemon zest, lemon juice and olive oil. Stir to form a slightly thick paste. Add the chicken thighs and rub the mixture all over, getting some under the skin where possible. Let rest at room temperature for 20 minutes or refrigerate for up to 2 hours for deeper flavor (if refrigerating, remove 30 minutes before cooking).

Preheat

Preheat the oven to 425°F (220°C). If you plan to start on the stovetop, place an ovenproof skillet (cast-iron preferred) over medium-high heat while the oven warms.

Sear

Add 1 tablespoon of olive oil to the hot skillet and swirl. Place the thighs skin-side down (press gently so skin makes full contact). Sear without moving for 4–6 minutes until the skin is deeply golden-brown and releases easily. If your skillet is crowded, sear in two batches. Use tongs to flip thighs skin-side up and sear the meat side for 1 minute—this builds color.

Roast

Transfer the skillet to the preheated oven (or move thighs to a rimmed baking sheet, skin-side up). Roast for 12–18 minutes, until an instant-read thermometer inserted into the thickest part reads 165°F (74°C). Cooking time depends on thigh size. If you did not sear, increase roast time to 20–25 minutes.

Finishing & Garnish

Rest & make pan sauce

Remove the skillet from the oven and transfer chicken to a plate to rest. Place skillet back on medium-low heat. Add butter and thyme to the hot pan juices and swirl until butter melts and emulsifies into a glossy sauce, about 1–2 minutes. Taste and adjust with a pinch of sea salt flakes if needed.

Finish

Spoon the buttery pan sauce over the chicken thighs. Sprinkle chopped parsley over the top and serve with lemon wedges on the side for squeezing. Optionally finish with an extra crack of black pepper to emphasize the peppery profile.
