Poached Chicken
Prepare chicken
Clean the chicken: remove any excess fat and giblets, pat the cavity dry. Rub 1 tablespoon kosher salt all over the skin and inside the cavity. Truss the legs together with kitchen twine so the bird cooks evenly.
Prepare poaching liquid: in a large stockpot (large enough to hold the chicken submerged), add 4 liters of water, bruised sliced ginger, and knotted white parts of green onions. Bring to a gentle boil.
Poach the chicken: when the liquid reaches a rolling boil, carefully lower the chicken breast-side down into the pot. Bring back to a boil over medium-high heat. Once boiling, immediately reduce the heat to maintain a gentle simmer (small steady bubbles), cover the pot, and poach for 25 minutes for a 3–3.5 lb chicken. Do not over-agitate the water—keep it gently simmering.
Shock the chicken: after 25 minutes, turn off the heat and keep the pot covered. Let the chicken sit in the hot liquid for another 15 minutes (this ensures even cooking). Prepare an ice bath (bowl large enough with 4 cups ice and cold water). Remove the chicken and immediately transfer it to the ice bath, submerging completely for 10 minutes to halt cooking and tighten the skin for a cold presentation.
Reserve poaching liquid: while chicken poaches, carefully strain and reserve at least 2 cups of the poaching liquid for the rice. Save extra for soup or refrigerate/freezing for later.
Finish and slice: after the chicken is chilled through in the ice bath, remove and pat dry. Rub a light drizzle (about 1 tsp) of sesame oil or neutral oil over the skin to shine (optional). Carve the chicken into serving pieces — bone-in, thin slices of breast, thigh, drumstick and wing pieces. Chill in refrigerator until ready to serve.
Aromatic Rice
Rinse and drain the jasmine rice in a fine-mesh sieve until water runs mostly clear. Let rice drain 10 minutes.
In a medium saucepan, heat 3 tablespoons chicken fat or neutral oil over medium heat. Add 1 tablespoon finely minced ginger and 1 teaspoon minced garlic; sauté 30–45 seconds until fragrant but not browned.
Add the drained rice to the saucepan and stir to coat each grain with the oil and aromatics for 1–2 minutes. Pour in 2 cups of the reserved strained chicken poaching liquid and add 1 teaspoon salt. Bring to a gentle boil.
Once boiling, reduce heat to low, cover tightly, and simmer for 12–15 minutes until liquid is absorbed and rice is tender. Turn off heat and let sit covered for 10 minutes. Fluff with a fork before serving.
Chili-Ginger Sauce (Sambal)
Combine 6 stemmed red Thai chilies, 3 garlic cloves, 1 tablespoon peeled chopped ginger, 1 teaspoon rice vinegar, 1 teaspoon lime juice, 1 teaspoon sugar, and 1 teaspoon salt in a mortar and pestle or small food processor. Grind or pulse to a coarse paste (retain some texture).
Taste and adjust heat/salt. Transfer to a small bowl and pour 2 teaspoons warmed vegetable oil over the top to release fragrance. Stir and set aside. Keep chilled until serving.
Ginger-Scallion Oil
Finely mince 4 stalks of green onions (white and green parts) and 2 tablespoons fresh ginger. Place in a heatproof bowl and sprinkle 1 teaspoon salt over them; mix to draw a little moisture out.
Heat 5 tablespoons neutral oil in a small saucepan until shimmering but not smoking (about 180–200°C / 350–390°F, or hot enough that a pinch of minced scallion sizzles immediately). Carefully pour the hot oil over the minced scallion-ginger mixture—pour in a thin stream to avoid spatter. Stir to combine; the oil will soften and cook the aromatics, creating a fragrant sauce.
Taste and adjust salt if needed. Let cool to room temperature and store covered in refrigerator if making ahead. Use as a drizzle over chicken and rice.
Assembly & Serving
Serve the seasoned aromatic rice alongside or beneath the chicken. Offer small bowls of chili-ginger sauce and light soy sauce for dipping.
For a true cold presentation: chill the plated chicken briefly (10–15 minutes) before serving. The rice is best served warm or at room temperature while the chicken is cold.
