Caramelizing the Onions

Prepare the Onions
Peel and slice the yellow onions thinly.

Cook the Onions
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced onions and 1 teaspoon of salt. Stir occasionally, cooking for about 20-25 minutes or until the onions are soft and caramelized. Set aside.
Cooking the Patty Melt

Form the Patties
In a bowl, season the ground beef with black pepper. Divide the beef into 4 equal portions and shape each portion into a patty.

Assemble the Melt
Once the patties are cooked, place a slice of Swiss cheese on each patty and cover the skillet to help the cheese melt, about 1-2 minutes.

Prepare the Bread
Spread Thousand Island dressing on one side of each slice of sourdough bread.

Serve
Once grilled to perfection, remove the patty melts from the skillet. Slice in half if desired, and serve hot with extra Thousand Island dressing on the side.
