Grilled Pineapple

Prepare the Pineapple
Cut the pineapple into rings or wedges, removing the core.

Season and Grill
In a small bowl, mix brown sugar and cinnamon. Sprinkle this mixture over the pineapple slices. Preheat your grill to medium heat, then grill the pineapple for 3-4 minutes on each side until caramelized and grill marks appear.

Blend the Ingredients
In a blender or food processor, combine scotch bonnet peppers, garlic cloves, fresh ginger, thyme, allspice, soy sauce, lime juice, brown sugar, salt, and black pepper. Blend until smooth.

Marinate (Optional)
If using chicken, marinate the chicken breasts in half of the jerk sauce for at least 30 minutes or overnight for deeper flavor.

Grill the Chicken (Optional)
If using marinated chicken, grill it over medium heat for about 6-7 minutes on each side or until fully cooked.

Assemble the Dish
On a serving plate, layer the grilled chicken (if using) topped with grilled pineapple slices. Drizzle with the remaining jerk sauce and top with slices of pepper jack cheese. Serve immediately.
