Preheat the Oven
Preheat your oven to 350°F (175°C) to prepare for baking the cookies.

Mix Dry Ingredients
In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.

Cream Butter and Sugars
In a large bowl, using a hand mixer or stand mixer, cream the unsalted butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes).

Add Eggs and Vanilla
Add the eggs, one at a time, mixing well after each addition. Then, mix in the vanilla extract until fully incorporated.

Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.

Fold in Chocolate Chips
Using a spatula, fold in the chocolate chips until evenly distributed throughout the dough.

Scoop and Bake Cookies
Using a cookie scoop or tablespoon, drop cookie dough onto a lined baking sheet, leaving space between each cookie. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.

Cool Cookies
Remove cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Assembling the Ice Cream Sandwich

Choose Ice Cream
Select your favorite flavor of ice cream that you would like to use for the sandwich.

Scoop Ice Cream
Once the cookies are completely cool, use an ice cream scoop to scoop a generous amount of ice cream onto the flat side of one cookie.

Complete the Sandwich
Top the scoop of ice cream with another cookie, flat side down, pressing gently to create a sandwich.

Serve immediately or wrap the sandwiches in plastic wrap and freeze for a firmer texture.
