Prepare the Salad Base
In a large mixing bowl, add the fresh spinach. Rinse the cherry tomatoes and cut them in half before adding them to the bowl. Clean the mushrooms and slice them thinly. Add the sliced mushrooms to the bowl. Rinse the alfalfa sprouts and add them to the mixture. Lastly, slice the red onion thinly and add it to the salad base. Toss gently to combine all ingredients.

Make the Hot Bacon Dressing
In a skillet, cook the bacon slices over medium heat until crispy. Once cooked, remove the bacon and chop it into small pieces, leaving the bacon drippings in the skillet. Add the apple cider vinegar, brown sugar, Dijon mustard, olive oil, salt, and black pepper to the skillet. Stir well to combine and heat until the mixture is bubbling, about 2-3 minutes. Remove from heat and add the chopped bacon back into the dressing.

Pour the hot bacon dressing over the salad base and toss gently to coat all the ingredients. Serve immediately for the best flavor and texture.
