Method
Preparing the Chicken

Prepare Chicken Breasts
Start by trimming any excess fat from the chicken breasts. Pat dry with paper towels.

Set Up Breading Station
In three separate shallow dishes, place flour seasoned with salt, pepper, and garlic powder in one, beaten egg mixed with milk in another, and bread crumbs in the third.

Bread the Chicken
Dredge each chicken breast in the flour, shaking off excess. Then dip into the egg mixture, allowing excess to drip off, and finally coat with bread crumbs, pressing gently to adhere.
Cooking the Chicken

Heat Oil
In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry Chicken
Carefully place the breaded chicken breasts in the hot oil, cooking for 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).

Toss in Buffalo Sauce
Once cooked, remove the chicken from the oil and drain on paper towels. In a large bowl, toss the hot chicken with buffalo sauce until fully coated.
Assembling the Sandwich

Prepare Kaiser Rolls
Slice the Kaiser rolls in half and lightly toast them if desired.

Build the Sandwich
On the bottom half of each roll, layer shredded lettuce, sliced tomato, onion, and pickles. Add the buffalo chicken on top, then sprinkle with blue cheese crumbles and cheddar cheese. Finish with the top half of the roll.

Serve with Ranch
Serve the sandwiches with ranch dressing on the side for dipping.
