Method
Preparation
- 1
Prepare the Ramekins
Preheat your oven to 425°F (220°C). Grease four 6-ounce ramekins with butter and dust them with cocoa powder to prevent sticking. Place the ramekins on a baking sheet.
Making the Cake
- 2
Melt Chocolate and Butter
In a microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- 3
Whisk Eggs and Sugar
In a separate bowl, whisk together the large eggs, egg yolks, and granulated sugar until pale and slightly thickened. This should take about 3-4 minutes.
- 4
Combine Mixtures
Gently fold the melted chocolate mixture into the egg mixture. Add the vanilla extract and mix until fully incorporated.
- 5
Add Flour
Sift the all-purpose flour over the chocolate mixture and fold it in gently until just combined. Be careful not to overmix.
- 6
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
Baking
- 7
Bake the Cakes
Bake in the preheated oven for 12-14 minutes. The edges should be firm, while the center remains soft and slightly jiggly.
- 8
Cool and Serve
Remove from the oven and let the cakes cool for 1 minute. Carefully invert each ramekin onto a plate. Serve warm with a scoop of vanilla ice cream.
