Mix the Ingredients
In a large mixing bowl, combine the diced tomatoes, onion, cilantro, jalapeño, minced garlic, lime juice, salt, and black pepper. Stir well to combine.

Taste and Adjust
Taste the salsa and adjust seasoning with additional salt, lime juice, or jalapeño if desired. Let it sit for at least 30 minutes for the flavors to meld.

Cut the Tortillas
Cut each corn tortilla into 6 wedges to form chips.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot.

Fry the Chips
Carefully add a few tortilla wedges to the hot oil and fry until golden and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

Season the Chips
Sprinkle salt over the chips while they are still warm. Repeat the frying process with the remaining tortilla wedges.
