Preparation of Chicken
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C).
- 2
Bread the Chicken
Set up a breading station with three shallow dishes: one with flour seasoned with salt and pepper, one with beaten eggs, and one with breadcrumbs. Dip each chicken breast first into the flour, then into the egg, and finally coat with breadcrumbs.
- 3
Bake the Chicken
Place the breaded chicken breasts on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until the chicken is cooked through and golden brown. Once cooked, let it rest for a few minutes before slicing.
Salad Assembly
- 4
Prepare the Greens
In a large bowl, combine the mixed greens, halved cherry tomatoes, and sliced cucumber.
- 5
Add Cheese and Eggs
Grate or cube the cheddar cheese and sprinkle it over the mixed greens. Slice the hard-boiled eggs and add them to the salad.
- 6
Top with Chicken
Slice the baked chicken breasts and lay them atop the salad. Drizzle with buffalo sauce according to your taste.
