Fish Preparation

    Season the Fish

    Pat the mahi mahi fillets dry with paper towels. Rub the olive oil over the fillets, then generously coat both sides with Cajun seasoning.

    Blacken the Fish

    Heat a cast-iron skillet over medium-high heat. Once hot, add the fillets to the skillet. Cook for about 3-4 minutes on each side, or until the fish is cooked through and has a blackened crust. Remove from heat and let rest.

    Prepare the Vegetables

    Wash the lettuce leaves under cold water and pat dry. Slice the tomato into thin rounds and the red onion into thin rings.

    Assemble the Sandwich

    Cut the ciabatta rolls in half horizontally. Spread a tablespoon of tartar sauce on the bottom half of each roll. Place a leaf of lettuce, a slice of tomato, a few rings of red onion, and pickle slices on top. Add the cooked mahi mahi fillet and cover with the top half of the ciabatta roll.

    Serve the blackened mahi sandwiches immediately with extra tartar sauce on the side.
