In a large mixing bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss well to coat the apples evenly. Allow the mixture to sit for about 15 minutes to let the sugars and spices meld.

Make the Crumb Topping
In another bowl, mix together the old-fashioned oats, all-purpose flour, brown sugar, melted butter, and salt. Stir until the mixture resembles coarse crumbs. Set aside.

Assemble the Mason Jar
Preheat your oven to 350°F (175°C). Layer the apple filling evenly into the bottom of mason jars, filling each jar about halfway. Top with a generous layer of the crumb topping, ensuring it covers the apple filling completely.

Place the filled mason jars on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the apples are tender and the topping is golden brown.
