Zucchini Fritters Preparation

    Prepare the Zucchini

    Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth, and squeeze out excess moisture. This step is crucial to keep the fritters from being soggy.

    Mix the Ingredients

    In a large mixing bowl, combine the grated zucchini, all-purpose flour, grated Parmesan cheese, eggs, garlic powder, salt, and black pepper. Mix until all ingredients are well incorporated.

    Heat the Oil

    In a large skillet, heat olive oil over medium heat. You want enough oil to cover the bottom of the skillet.

    Fry the Fritters

    Using a spoon or your hands, scoop out portions of the zucchini mixture and flatten them slightly. Place them in the hot oil. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
