Zucchini Fritters
Green Goddess Dip
Method
Zucchini Fritters Preparation
- 1
Prepare the Zucchini
Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth, and squeeze out excess moisture. This step is crucial to keep the fritters from being soggy.
- 2
Mix the Ingredients
In a large mixing bowl, combine the grated zucchini, all-purpose flour, grated Parmesan cheese, eggs, garlic powder, salt, and black pepper. Mix until all ingredients are well incorporated.
- 3
Heat the Oil
In a large skillet, heat olive oil over medium heat. You want enough oil to cover the bottom of the skillet.
- 4
Fry the Fritters
Using a spoon or your hands, scoop out portions of the zucchini mixture and flatten them slightly. Place them in the hot oil. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
Green Goddess Dip Preparation
- 5
Combine Ingredients
In a blender or food processor, combine the Greek yogurt, fresh basil leaves, fresh parsley leaves, garlic clove, lemon juice, salt, and black pepper.
- 6
Blend Until Smooth
Blend the mixture until smooth and creamy. If the dip is too thick, you can add a little water to achieve your desired consistency.
- 7
Taste and Adjust
Taste the dip and adjust seasoning with additional salt, pepper, or lemon juice if necessary.
