Winemaking Process
1. Harvesting the Grapes
Harvest the Pinot Noir grapes when they are fully ripe, usually from late summer to early autumn.
2. Crushing the Grapes
Destem and crush the harvested grapes to release their juice. Place the crushed grapes in a fermentation vessel.
3. Adding Water and Sugar
Add 3 liters of water to the crushed grapes to help with fermentation. Dissolve 200g of sugar in a small amount of water and add it to the mixture.
4. Inoculating Yeast
Sprinkle 10g of yeast over the grape mixture. Stir gently to combine and cover the fermentation vessel with a cloth.
5. Fermentation
Allow the mixture to ferment for about 7-14 days, stirring daily. Monitor the temperature to keep it around 20-25°C (68-77°F).
6. Pressing the Wine
Once fermentation is complete, press the grape mixture to separate the liquid wine from the solids. Collect the wine in a clean container.
7. Optional Sulfite Addition
If desired, add 50mg of sulfites to the wine to help preserve it.
8. Aging the Wine
Transfer the wine to oak barrels or glass carboys and allow it to age for at least 6 months, tasting periodically to check the flavor.
9. Bottling
Once the wine has aged to your liking, bottle it in sterilized bottles and seal them. Allow the wine to rest for an additional few months before enjoying.
