Preparing the Mussels

Clean the Mussels
Rinse the fresh mussels under cold running water to remove any debris or sand. Scrub the shells gently with a brush if needed, and remove the beards.

Cook Pancetta
In a large skillet over medium heat, add the diced pancetta. Cook until it becomes crispy, about 5-7 minutes, then remove it from the pan and set it aside.

Sauté Vegetables
In the same skillet, add the fresh corn kernels, halved cherry tomatoes, and diced chilies. Sauté for about 3-4 minutes until the vegetables are tender.

Add Roasted Garlic Butter
Squeeze the roasted garlic from the head into the skillet. Add the stick of unsalted butter and heat until melted, mixing thoroughly with the vegetables.

Combine and Simmer
Add the cleaned mussels to the skillet along with the crispy pancetta and white wine. Stir to combine, cover the skillet, and let simmer for about 5-7 minutes until the mussels have opened up.

Finish with Herbs
Once cooked, remove from heat and stir in the chopped fresh herbs. Discard any mussels that have not opened.
