Preparing the Steak

    Season the Steak

    Generously season both sides of the Wagyu ribeye cap steaks with kosher salt and black pepper. Let them sit at room temperature for about 30 minutes to allow the seasoning to penetrate the meat.

    Sear the Steak

    In a large cast-iron skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, add the seasoned steaks to the skillet. Sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

    Add Aromatics

    During the last minute of cooking, add the fresh rosemary sprigs to the skillet. Spoon some of the rendered fat over the steaks to infuse flavor. Remove the steaks from the skillet and let them rest for at least 5 minutes before slicing.

Cooking the Scallops

    Prepare the Scallops

    Pat the day boat scallops dry with paper towels. This will help to achieve a nice sear. Season both sides with salt and black pepper.

    Sear the Scallops

    In the same skillet used for the steak, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the scallops to the skillet, cooking for 2-3 minutes on each side without moving them to get a good sear.

    Finish the Scallops

    Once the scallops are golden brown and cooked through, add the lemon juice and fresh parsley to the skillet. Toss gently to combine and remove from heat.
