Prepare the Wagyu Filet

Season the Wagyu
Sprinkle the Westholme Wagyu beef filet evenly with salt and black pepper on all sides.

Cook the Filet
Preheat a skillet over medium-high heat. Add a bit of oil if desired, then place the seasoned Wagyu filet in the skillet. Cook for about 3-4 minutes on each side for medium-rare, or until your desired doneness is reached. Once cooked, remove from heat and let it rest for 5 minutes before slicing.

Roast the Tomato
Preheat your oven to 400°F (200°C). Slice the tomato into thick rounds, drizzle with olive oil, and season with salt and pepper. Roast in the oven for about 15-20 minutes until soft and slightly caramelized.

Caramelize the Onion
While the tomato is roasting, slice the onion thinly. In a skillet over medium heat, add a tablespoon of oil and the sliced onion. Cook, stirring occasionally, for about 15-20 minutes until golden brown and caramelized.
Prepare the Aioli

Mix the Aioli
In a small bowl, combine the basil pesto and mayonnaise. Stir until well blended to create the basil pesto aioli.
Assemble the Sliders

Build the Sliders
Slice the brioche buns in half. On the bottom half, place a handful of arugula, followed by a slice of the cooked Wagyu filet, a piece of roasted tomato, and a generous spoonful of caramelized onions. Finally, spread the basil pesto aioli on the top half of the bun and place it on top to complete the slider.

Serve the Wagyu filet sliders warm and enjoy with your favorite sides.
