Preparation of Ingredients

Prepare the Garlic Butter
In a small saucepan, melt the unsalted butter over low heat. Add crushed garlic cloves and fresh herbs. Cook gently for about 5 minutes until the garlic is fragrant. Set aside.

Prepare the Potatoes
Wash and cut the potatoes into small cubes. Boil them in salted water for about 10 minutes until tender. Drain and set aside.

Prepare the Vegetables
Trim the ends of the French beans and wash the baby peppers. Cut the baby peppers in half lengthwise.
Cooking the Wagyu

Season the Wagyu
Rub the Wagyu sirloin with porcini mushroom powder and season with salt and pepper. Let rest for 10 minutes.

Sear the Wagyu
Heat a skillet over medium-high heat. Sear the Wagyu sirloin for 3-4 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.
Cooking the Vegetables and Sauce

Cook the Vegetables
In the same skillet, add a bit of oil and sauté the French beans and baby peppers for about 5-7 minutes until tender and slightly charred. Season with salt.

Make the Peppercorn Demi
In a small saucepan, combine beef stock, crushed black peppercorns, and red wine. Simmer for 10-15 minutes until reduced by half. Strain and set aside.
Plating

Serve the Dish
On a plate, place a portion of the crispy potatoes, then lay the sliced Wagyu sirloin on top. Arrange the sautéed French beans and baby peppers alongside. Drizzle the herb roasted garlic butter over the Wagyu and finish with the peppercorn demi.
