Veggie Patty

Method

Prepare the Veggie Patty

    Cook Quinoa

    Rinse 1 cup of quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed. Remove from heat and let sit covered for 5 minutes. Fluff with a fork.

    Prepare the Mixture

    In a large bowl, mash 1 cup of black beans with a fork. Add the cooked quinoa, 1 cup of grated carrot, 0.5 cups of finely chopped onion, 2 tsp of minced garlic, 1 tsp of cumin, 1 tsp of paprika, 0.5 tsp of salt, and 0.5 tsp of black pepper. Mix until combined.

    Form Patties

    Add 1 whole egg and 0.5 cups of bread crumbs to the mixture. Stir until everything is well combined. Divide the mixture into 4 equal portions and shape them into patties.

    Cook Patties

    Heat a non-stick skillet over medium heat with a little oil. Cook the patties for about 4-5 minutes on each side or until golden brown and heated through.

Assemble the Burger

    Toast the Brioche Buns

    Slice the brioche buns in half and toast them in the skillet or oven until golden brown.

    Add Toppings

    On the bottom half of each toasted brioche bun, place one cooked veggie patty. Top with a slice of mozzarella cheese, a few slices of avocado, roasted tomatoes, a handful of arugula, and charred jalapeño slices. Drizzle with green goddess dressing.

    Finish the Burger

    Place the top half of the brioche bun over the toppings. Press down gently to secure.
