For the Spicy Peppered Shrimp

Prepare the Shrimp
In a bowl, combine the peeled and deveined shrimp with lemon juice, black pepper, and a pinch of salt. Let marinate for 15 minutes.

Cook the Shrimp
In a large skillet, heat olive oil over medium heat. Add the marinated shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from skillet and set aside.

Make the Sauce
In the same skillet, add roasted red bell peppers and sweet corn. Sauté for about 3-4 minutes until heated through. Pour in the white wine and let it simmer for about 5 minutes, allowing it to reduce slightly.

Combine Shrimp and Sauce
Return the cooked shrimp to the skillet, toss to coat with the sauce, and heat through for an additional 2 minutes.
For the Creamy Polenta

Prepare the Polenta
In a pot, bring water to a boil. Gradually whisk in the polenta, ensuring no lumps form. Reduce heat to low and cook, stirring frequently, until the polenta thickens (about 15-20 minutes).

Add Butter and Cheese
Once the polenta is thickened, stir in the butter and grated parmesan cheese until melted and creamy. Season with salt to taste.
To Serve

Spoon the creamy polenta onto plates and top with the spicy peppered shrimp and sauce. Garnish with additional black pepper, if desired.
