Prepare the Ingredients

Cook the Cavatelli
In a large pot of salted boiling water, cook the cavatelli pasta according to package instructions until al dente. Drain and set aside.

Sauté the Pancetta
In a large skillet over medium heat, add the diced pancetta and sauté until crispy, about 5-7 minutes. Remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add olive oil if needed, then add the diced red bell pepper and minced garlic. Cook until softened, about 3-4 minutes.

Add Spinach
Add the fresh spinach to the skillet and cook until wilted, about 2 minutes.
Cook the Seafood

Cook the Sausage
Add the Italian sausage to the skillet, breaking it up with a spoon. Cook until browned and cooked through, about 5-6 minutes.

Add the Shrimp
Stir in the shrimp and cook until they turn pink and opaque, about 3-4 minutes.
Make the Sauce

Deglaze the Pan
Pour in the dry white wine to deglaze the skillet, scraping up any browned bits. Let it simmer for about 2-3 minutes.

Add Mascarpone
Reduce the heat to low and stir in the mascarpone cheese until melted and smooth.

Combine Ingredients
Return the cooked cavatelli and the crispy pancetta to the skillet. Toss everything together until well combined. Season with salt and black pepper to taste.

Serve the shrimp sausage cavatelli hot, garnished with additional spinach or herbs if desired.
