Cooking the Pasta

    Boil the Cavatelli

    Bring a large pot of salted water to a boil. Add the cavatelli pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Preparing the Sauce

    Cook the Pancetta and Sausage

    In a large skillet over medium heat, add the diced pancetta. Cook until crispy, about 5 minutes. Then, add the Italian sausage and cook until browned and cooked through, breaking it up with a spoon, about 7-10 minutes.

    Sauté the Vegetables

    Add the diced red bell pepper and minced garlic to the skillet with the meat. Sauté for about 3-4 minutes until the peppers are tender and the garlic is fragrant.

    Deglaze with White Wine

    Pour in the white wine, scraping up any browned bits from the bottom of the skillet. Allow the wine to reduce for about 2-3 minutes.

    Add Spinach and Mascarpone

    Stir in the fresh spinach and cook until wilted, about 2 minutes. Then, add the mascarpone cheese, stirring until melted and creamy. Season with salt and black pepper.

Combining and Serving

    Combine Pasta with Sauce

    Add the cooked cavatelli pasta to the skillet, tossing to combine everything well. If the sauce is too thick, add a little pasta water to reach the desired consistency.

    Serve

    Divide the shrimp and sausage cavatelli among plates. Garnish with additional black pepper if desired and serve hot.
