Short Rib

Method

Short Rib Preparation

  1. 1

    Season the Short Ribs

Season the beef short ribs with salt and black pepper on all sides.

  2. 2

    Sear the Ribs

In a large Dutch oven, heat olive oil over medium-high heat. Sear the seasoned short ribs for about 3-4 minutes per side until browned. Remove from pot and set aside.

  3. 3

    Sauté Vegetables

In the same pot, add chopped onion, carrot, and celery. Sauté for 5-7 minutes until softened. Add minced garlic and sauté for an additional minute.

  4. 4

    Deglaze the Pot

Pour in the red wine and scrape the bottom of the pot to release any browned bits. Allow the wine to reduce for about 2-3 minutes.

  5. 5

    Add Broth and Herbs

Return the short ribs to the pot. Add beef broth, thyme, and the bay leaf. Bring to a simmer.

  6. 6

    Braise the Ribs

Cover and transfer the pot to a preheated oven at 300°F (150°C). Braise for approximately 12 hours, or until the meat is tender and falling off the bone.

  7. 7

    Shred the Meat

Remove the short ribs from the oven and let them cool slightly. Shred the meat using two forks, discarding the bones and excess fat.

Panini Assembly

  1. 8

    Prepare Caramelized Onions

In a skillet, heat 1 tablespoon of butter over medium heat. Add sliced onions and cook slowly, stirring occasionally for about 20-30 minutes until golden brown and caramelized.

  2. 9

    Assemble the Panini

On a slice of sourdough bread, layer provolone cheese, shredded short rib, caramelized onions, arugula, and oven-roasted tomatoes. Top with another slice of sourdough.

  3. 10

    Grill the Panini

Heat a grill pan or panini press. Spread butter on the outside of the sandwich. Grill for about 4-5 minutes on each side or until golden brown and the cheese is melted.

  4. 11

    Serve

Remove the panini from the heat, slice in half, and serve immediately. Enjoy your Short Rib + Grilled Cheese Panini!
