Short Rib Preparation

Season the Short Ribs
Season the beef short ribs with salt and black pepper on all sides.

Add Broth and Herbs
Return the short ribs to the pot. Add beef broth, thyme, and the bay leaf. Bring to a simmer.

Braise the Ribs
Cover and transfer the pot to a preheated oven at 300°F (150°C). Braise for approximately 12 hours, or until the meat is tender and falling off the bone.

Shred the Meat
Remove the short ribs from the oven and let them cool slightly. Shred the meat using two forks, discarding the bones and excess fat.

Prepare Caramelized Onions
In a skillet, heat 1 tablespoon of butter over medium heat. Add sliced onions and cook slowly, stirring occasionally for about 20-30 minutes until golden brown and caramelized.

Assemble the Panini
On a slice of sourdough bread, layer provolone cheese, shredded short rib, caramelized onions, arugula, and oven-roasted tomatoes. Top with another slice of sourdough.

Grill the Panini
Heat a grill pan or panini press. Spread butter on the outside of the sandwich. Grill for about 4-5 minutes on each side or until golden brown and the cheese is melted.

Serve
