Preparation of Salmon Tuscano

Prepare the Marinade
In a bowl, mix together the white wine, minced garlic, dried oregano, chili flakes, lemon juice, and extra virgin olive oil. Add the salmon fillets and marinate for at least 30 minutes.

Grill the Artichokes and Sundried Tomatoes
While the salmon is grilling, toss the artichoke hearts and sundried tomatoes in olive oil and grill for about 4-5 minutes until they are slightly charred.

Sauté the Spinach
In a skillet, melt 2 tablespoons of butter over medium heat. Add the fresh spinach and sauté until wilted, about 2-3 minutes.

Cook the Rice
Add the Arborio rice to the pot and stir for about 2 minutes until the rice is lightly toasted. Begin adding the broth, one ladle at a time, stirring frequently, allowing the liquid to be absorbed before adding more.

Finish the Risotto
Continue this process for about 18-20 minutes or until the rice is creamy and al dente. Stir in the grated Parmesan cheese and chopped parsley before serving.
