    Chop the pancetta, onion, celery, and potatoes into small pieces. Mince the garlic.

    Cook the Pancetta

    In a large pot over medium heat, add the chopped pancetta and sauté until crispy, about 5-7 minutes.

    Add the chopped onion, celery, and minced garlic to the pot. Cook until the vegetables are soft, about 3-4 minutes.

    Stir in the diced potatoes, thyme, bay leaf, salt, and black pepper. Cook for an additional 2 minutes, stirring occasionally.

    Pour in the chicken broth and white wine. Bring to a simmer and cook until the potatoes are tender, about 15-20 minutes.
