Prepare the tomatoes
If you haven't already, oven roast the tomatoes. Preheat your oven to 200°C (400°F). Cut tomatoes in half, drizzle with EVOO, and sprinkle with sea salt. Place cut side up on a baking sheet and roast for about 25-30 minutes until they are caramelized and slightly shriveled.

Slice the mozzarella
While the tomatoes are roasting, slice the fresh mozzarella into thin rounds, approximately 1/4 inch thick.

Assemble the ingredients
On a serving platter or a pizza stone, layer the sliced fresh mozzarella evenly. Add the oven roasted tomatoes on top of the mozzarella.

Add basil and seasoning
Tear the fresh basil leaves and sprinkle them generously over the assembled mozzarella and tomatoes. Drizzle with extra virgin olive oil and sprinkle with a pinch of sea salt to taste.

Enjoy the Margherita dish immediately as a fresh appetizer or light meal. You can serve it with crusty bread or on its own.
