Method

Preparation

  1. 1

    Prepare the tomatoes

Wash the heirloom tomatoes thoroughly. Dice them into small cubes and place them in a bowl.

  2. 2

    Season the tomatoes

Add salt, black pepper, and chopped fresh basil leaves to the diced tomatoes. Drizzle 1 tablespoon of extra virgin olive oil over the mixture and gently toss to combine. Set aside to allow the flavors to meld.

Grilling the Bread

  1. 3

    Preheat the grill

Preheat your grill to medium-high heat.

  2. 4

    Prepare the ciabatta

Slice the ciabatta loaf in half lengthwise. Brush the cut sides with 2 tablespoons of extra virgin olive oil.

  3. 5

    Grill the ciabatta

Place the ciabatta halves cut side down on the grill. Grill for about 2-3 minutes or until grill marks appear and the bread is slightly crispy. Remove from the grill.

Assembling the Bruschetta

  1. 6

    Top the bread

Spoon the seasoned tomato mixture generously onto the grilled side of the ciabatta.

  2. 7

    Add Parmesan

Sprinkle grated Parmesan cheese over the top of the bruschetta.

  3. 8

    Drizzle with balsamic glaze

Finish by drizzling balsamic glaze over the assembled bruschetta.

Serving

  1. 9

    Cut and serve

Slice the bruschetta into individual pieces and serve immediately while still warm.
