Marinate the Chicken
In a bowl, mix the garlic oil, salt, and black pepper. Add the chicken breasts to the bowl and ensure they are evenly coated in the marinade. Cover and let marinate in the refrigerator for at least 30 minutes.

Make the Pesto
In a food processor, combine the basil leaves, pine nuts, grated Parmesan cheese, garlic cloves, and salt. Pulse until finely chopped. While the processor is running, slowly drizzle in the extra virgin olive oil until the mixture is smooth and well combined.

Assemble the Dish
Preheat the oven to 375°F (190°C). Slice the grilled chicken breasts and place them on a baking dish. Spread a generous amount of pesto over each piece of chicken. Top with shredded mozzarella and fontina cheese, followed by the oven-dried tomatoes.

Place the baking dish in the oven and bake for 15-20 minutes or until the cheese is melted and bubbly.
