Pasta Dough

Mix the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and crack the eggs into it. Gradually mix the flour into the eggs until a dough forms.

Knead the Dough
Transfer the dough to a floured surface. Knead for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Cheese Mixture
In a mixing bowl, combine the ricotta, mozzarella, Parmesan, Gorgonzola, and black pepper. Mix until well blended. Set aside.

Roll Out the Dough
Divide the rested dough into quarters. Roll each piece out into thin sheets using a pasta machine or rolling pin.

Fill the Ravioli
Place small spoonfuls of the cheese mixture onto one sheet of dough, leaving space in between. Lightly brush the edges with water and fold the dough over to enclose the filling. Press down to seal and cut into squares.
Cooking and Sauce Preparation

Cook the Bacon
In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the rendered fat in the pan.

Sauté Garlic and Tomatoes
In the same skillet, add minced garlic and sauté for 1 minute. Then add blistered cherry tomatoes and sauté until they begin to burst.

Deglaze with Wine
Pour in the white wine, scraping the bottom of the pan to release any browned bits. Let it simmer for about 2-3 minutes.

Add Cream and Butter
Stir in the heavy cream and butter, cooking until the sauce thickens. Season with salt and pepper to taste.

Cook the Ravioli
Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes or until they float to the top. Drain and add to the sauce.

Combine and Serve
Gently toss the ravioli in the sauce, adding cooked bacon, fresh basil, and arugula. Serve immediately.
