    Prepare the Medallions

    Season the filet mignon with salt and black pepper on all sides. Set aside.

    Sear the Medallions

    In a skillet, heat the olive oil over medium-high heat. Add the filet medallions and sear for about 3-4 minutes on each side for medium-rare, or until your desired doneness. Add butter during the last minute of cooking and baste the medallions with the melted butter. Remove from heat and let rest.

Crispy Potatoes

    Prepare Potatoes

    Preheat your oven to 425°F (220°C). Wash and halve the baby potatoes. In a bowl, toss them with olive oil, salt, black pepper, and garlic powder.

    Bake Potatoes

    Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until golden brown and crispy, flipping halfway through.

    In a separate skillet, heat olive oil over medium heat. Add the broccolini and bell peppers. Season with salt and sauté for about 5-7 minutes until tender-crisp.

    In a small bowl, mix balsamic vinegar, pesto sauce, and roasted garlic together. Adjust seasoning if necessary.
