    Boil the Eggs

    Place the eggs in a pot and cover them with cold water. Bring the water to a boil over medium heat. Once boiling, cover the pot and remove it from heat. Let the eggs sit in the hot water for 12-14 minutes.

    Cool the Eggs

    After the time is up, transfer the eggs to an ice water bath to cool for about 5-10 minutes. This will make peeling easier.

Making the Filling

    Prepare the Eggs

    Once the eggs are cool, gently tap them on a hard surface to crack the shells. Peel the eggs under running water to help remove the shells easily.

    Cut and Mix

    Slice the peeled eggs in half lengthwise. Carefully remove the yolks and place them in a bowl. Add the mayonnaise, Dijon mustard, truffle oil, grated pecorino cheese, salt, and pepper to the yolks. Mash everything together until smooth and creamy.

Assembly

    Fill the Egg Whites

    Using a spoon or a piping bag, fill the egg white halves with the yolk mixture.

    Add Toppings

    Sprinkle the crumbled crispy prosciutto and finely chopped chives on top of the filled eggs.
