Fish Preparation

Marinate the Cod
In a large bowl, combine the Calabrian chili paste, lemon juice, salt, and black pepper. Add the cod fillets and ensure they are coated evenly. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate.
Tempura Batter Preparation

Prepare the Tempura Batter
In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt. Gradually add the cold sparkling water while stirring until the batter is smooth and slightly thickened. Set aside.
Frying the Fish

Heat Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Cod
Remove the cod from the marinade and dip each fillet into the tempura batter. Carefully place the battered fish in the hot oil and fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

Prepare the Tomatoes
Slice the tomatoes and season lightly with salt and pepper. Set aside.
Sandwich Assembly

Assemble the Sandwich
Toast the brioche buns lightly. On the bottom half of each bun, layer the arugula, followed by the marinated tomato slices, and then top with the crispy fried cod. Drizzle spicy aioli over the fish and place the top half of the bun to complete the sandwich.
