Preparation of Ingredients

    Prepare the Vegetables

    Thinly slice the onion and mushrooms. Set aside.

    Roast the Tomatoes

    If using fresh tomatoes, roast them in the oven at 400°F (200°C) for about 15-20 minutes until they are soft and slightly caramelized. Set aside.

Cooking the Steak and Vegetables

    Caramelize the Onions

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 15-20 minutes until they are golden brown and caramelized. Remove from skillet and set aside.

    Cook the Mushrooms

    In the same skillet, add another tablespoon of olive oil if needed. Add the sliced mushrooms and cook for about 5-7 minutes until they are tender and browned. Remove from skillet and set aside with the onions.

    Cook the Steak

    In the same skillet, increase the heat to medium-high and add the shaved steak. Cook for about 3-5 minutes until browned and cooked through. Season with salt and pepper to taste.

    Combine Ingredients

    Add the caramelized onions and cooked mushrooms back into the skillet with the steak. Mix well and let cook together for an additional 2 minutes.

Assembling the Cheesesteak

    Prepare the Rolls

    Slice the hoagie rolls open lengthwise without cutting all the way through.

    Layer the Ingredients

    On each hoagie roll, layer the steak, mushroom, and onion mixture. Top with roasted tomatoes and sliced fontina cheese.

    Melt the Cheese

    Place the assembled sandwiches under a broiler for 2-3 minutes until the cheese is melted and bubbly.

    Add Fresh Ingredients

    Remove from the oven and top with fresh arugula and a generous spread of garlic aioli.

    Serve the cheesesteaks hot with your choice of sides.
