Preparation of Balsamic Reduction

    Make Balsamic Reduction

    In a small saucepan over medium heat, add balsamic vinegar. Bring to a simmer, then reduce the heat to low and let it cook for about 15-20 minutes, stirring occasionally until it thickens and coats the back of a spoon. Remove from heat and let it cool.

Grilling Tomatoes and Bread

    Prepare and Grill Tomatoes

    Preheat your grill to medium-high heat. Cut the Campari tomatoes in half and drizzle them with 2 tablespoons of extra virgin olive oil and sprinkle with Maldon sea salt. Place them cut-side down on the grill and cook for about 4-5 minutes until charred and softened.

    Grill the Bread

    While the tomatoes are grilling, brush the slices of Country Italian bread with extra virgin olive oil. Grill the bread for about 2-3 minutes on each side until toasted and golden brown. After grilling, rub the toasted bread with the garlic clove for flavor.

Assembly

    Assemble the Caprese

    On a serving platter, place the grilled Campari tomatoes. Tear the burrata cheese and place it on top of the tomatoes. Drizzle basil pesto over the burrata and tomatoes. Finally, drizzle the balsamic reduction over the top, and finish with a sprinkle of Maldon sea salt.

    Serve

    Serve the Campari Tomato and Burrata Caprese warm or at room temperature, alongside the grilled garlic bread for dipping.
