Prepare the Pears
Peel and core the D'Anjou pears, then cut them into quarters.

Braising the Pears
In a medium saucepan over medium heat, combine the white wine, sugar, and cinnamon stick. Stir until the sugar is dissolved.

Add the Pears
Gently add the pear quarters to the saucepan. Reduce heat to low and let simmer for about 15-20 minutes, or until the pears are tender but not mushy.

Cool the Pears
Once cooked, remove the pears from the heat and let them cool in the braising liquid. Discard the cinnamon stick before using.

Prepare the Greens
In a large salad bowl, combine the mixed greens and dried cherries.

Add the shaved fennel to the bowl, mixing it gently with the greens and cherries.
