Make Dough
In a large bowl, combine the mashed potatoes, flour, grated Asiago cheese, egg yolk, salt, and black pepper. Mix until a soft dough forms. If the dough is too sticky, add more flour as needed.

Divide the dough into four pieces. Roll each piece into a long rope, about 1/2 inch thick. Cut the ropes into 1-inch pieces. If desired, use a fork to create ridges on each piece for better sauce adherence.
