Prepare the Ahi Tuna

Season the Tuna
Pat the sushi-grade Ahi tuna filets dry with paper towels. Rub the filets with extra virgin olive oil, then season with sea salt and Calabrese chili flakes on both sides.

Sear the Tuna
Heat a skillet over medium-high heat and add a drizzle of EVOO. Once hot, sear the tuna filets for about 1-2 minutes on each side for medium-rare. Remove from heat and let rest.
Cook the Vegetables

Make the Parmesan Risotto

Cook the Rice
Add the Arborio rice to the saucepan and stir for 2 minutes until the rice is slightly toasted. Begin adding the broth, one cup at a time, stirring frequently until the liquid is absorbed before adding more.

Finish the Risotto
Once the rice is creamy and al dente (about 18-20 minutes), stir in the grated Parmesan cheese and season with black pepper. Remove from heat and cover to keep warm.
Prepare the Basil Lemon Butter

Make the Butter
In a small bowl, combine 4 tablespoons of softened butter, chopped basil, lemon juice, and lemon zest. Mix well and set aside.
