Method

Pancakes

  1. 1

    Prepare the Batter

In a large mixing bowl, whisk together flour, baking powder, sugar, and salt until well combined.

  2. 2

    Mix Wet Ingredients

In another bowl, whisk together milk, eggs, and vanilla extract until smooth.

  3. 3

    Combine Ingredients

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.

  4. 4

    Cook the Pancakes

Heat a non-stick skillet over medium heat and add 1 tablespoon of butter. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.

French Toast

  1. 5

    Prepare the Custard

In a shallow dish, whisk together eggs, milk, vanilla extract, and ground cinnamon until fully combined.

  2. 6

    Soak the Bread

Dip each slice of bread into the custard mixture, allowing it to soak for a few seconds on each side.

  3. 7

    Cook the French Toast

In a skillet over medium heat, melt 1 tablespoon of butter. Add the soaked bread slices and cook until golden brown on both sides, about 3-4 minutes per side.

Assembly

  1. 8

    Plate the Dish

Place a serving of pancakes or French toast on a plate.

  2. 9

    Add Toppings

Top with bacon jam, a handful of Oregon berries, and a generous dollop of whipped cream.
