In a large mixing bowl, whisk together flour, baking powder, sugar, and salt until well combined.

Combine Ingredients
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.

Cook the Pancakes
Heat a non-stick skillet over medium heat and add 1 tablespoon of butter. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.

In a shallow dish, whisk together eggs, milk, vanilla extract, and ground cinnamon until fully combined.

Soak the Bread
Dip each slice of bread into the custard mixture, allowing it to soak for a few seconds on each side.

In a skillet over medium heat, melt 1 tablespoon of butter. Add the soaked bread slices and cook until golden brown on both sides, about 3-4 minutes per side.
