Toast the Sourdough

Begin by toasting the slices of sourdough bread until they are golden brown and crispy. This can be done in a toaster or on a grill.

Prepare the Avocado

While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until creamy. Season with salt and a squeeze of lime juice to taste.

Slice the Watermelon Radish

Using a sharp knife, thinly slice the watermelon radish into rounds or half-moons for a decorative touch.

Poach the Eggs

In a saucepan, bring water to a gentle simmer. Crack the eggs into individual small bowls, then gently slide them into the water. Cook for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon and drain on paper towels.

Assemble the Toast

Spread the mashed avocado generously on each slice of toasted sourdough. Top with slices of watermelon radish and a poached egg on each toast.

Sprinkle micro cilantro over the top of each toast, and finish with a pinch of salt, black pepper, and an additional squeeze of lime juice if desired. Serve immediately with a side of house salad or O'Brien potatoes.
