Preparation
Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick, ensuring they are uniform in size for even cooking.
Soak the Potatoes
Place the cut potato strips in a bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.
Cooking
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the correct temperature.
Drain and Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture. This is crucial for achieving a crispy texture.
Fry the Potatoes
Carefully add a batch of dried potato strips to the hot oil. Fry for about 5-7 minutes or until golden brown and crispy. Avoid overcrowding the pot to maintain oil temperature.
