Prepare the Potatoes

Wash and peel the potatoes. Use a sharp knife or a mandoline to slice the potatoes into thin, even rounds, about 1/8 inch thick.

Soak the Potato Slices

Place the sliced potatoes in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch, which will help achieve a crispier chip.

Heat the Oil

In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a slice of potato; if it sizzles immediately, the oil is ready.

Fry the Potato Slices

Remove the potato slices from the water and pat them dry with paper towels. Carefully add a handful of potato slices into the hot oil, being careful not to overcrowd the pot. Fry them for about 3-4 minutes or until they are golden brown and crispy.

Drain and Season

Using a slotted spoon, remove the chips from the oil and place them on a plate lined with paper towels to drain excess oil. While they are still hot, sprinkle with salt, paprika, and garlic powder to taste.

Repeat and Serve

Continue the frying process with the remaining potato slices, making sure to maintain the oil temperature. Once all chips are cooked and seasoned, serve immediately or store in an airtight container for later.
