Prepare and crumble tofu

Drain the 14 oz block of firm tofu. Press it gently between clean towels or paper towels for 5–10 minutes to remove excess water. Crumble tofu into bite-sized pieces with your hands or a fork until it resembles large scrambled eggs.

Mix spices with tofu

In a bowl, combine crumbled tofu with 1 tsp turmeric, 1 tsp ground cumin, 1 tsp smoked paprika, 0.5 tsp ground coriander, 0.25 tsp red pepper flakes, 0.75 tsp salt, and 0.25 tsp black pepper. Toss gently so the spices coat the tofu evenly. Set aside while you prepare the vegetables (this allows flavors to meld).

Sauté aromatics and vegetables

Heat 1 tbsp olive oil in a large nonstick or cast-iron skillet over medium heat. Add 0.5 cup finely chopped yellow onion and sauté for 3–4 minutes until translucent and beginning to brown. Add 2 minced garlic cloves and 0.5 cup diced red bell pepper; cook another 2–3 minutes until the pepper softens.

Add tofu

Increase heat to medium-high and add the seasoned crumbled tofu to the pan. Spread it into an even layer and let it sit undisturbed for 1–2 minutes to get a little color. Stir and continue to cook, stirring occasionally, for 4–6 minutes until the tofu is heated through and has some golden edges.

Wilt greens

Stir in 2 cups packed baby spinach and cook 1–2 minutes until wilted. If the pan seems dry, add up to 2 tbsp non-dairy milk to help steaming and create a slightly creamier texture.

Finish with scallions

Stir in 2 tbsp sliced scallions and cook 30 seconds more to combine flavors.

Creaminess & Finish

Add nutritional yeast and seasonings

Reduce heat to low. Sprinkle 2 tbsp nutritional yeast over the scramble, add 1 tsp soy sauce or tamari and 1 tsp lemon juice. Stir thoroughly to distribute the cheesy flavor, umami, and brightness. Taste and adjust salt or pepper as needed.

Garnish and serve

Turn off heat and fold in 2 tbsp chopped fresh cilantro or parsley if using. Transfer the scramble to plates or tortillas and serve immediately. Optionally garnish with extra scallions, a squeeze of lemon, hot sauce, or avocado slices.
